CHOCOLATE ZUCCINI CAKE

This could really be called cake.

Rich and moist.

Best aged one day.

Chocolate Zucchini Bread

3 eggs

2 c sugar

1 1/4 c vegetable oil

4 c grated zucchini

2 t vanilla extract

6 T unsweetened cocoa powder

2.5 c flour

1 t baking soda

1 t salt

2 t cinnamon

1 c chocolate chips

In mixer blend eggs, sugar and oil well.

Add zucchini, mix well.

Sift dry ingredients and mix on low.

Fold in chocolate chips.

Bake at 350 in greased bundt pan.

(I used an angel food cake pan)

for 50-55 minutes.

I thought this was so enjoyable and I loved that the kids got to hear the story. Cayden and Hunt especially joined in, but mostly Cayden.

And of course with HOlly in town its' Rainforest Cafe and then a walk through the mall. They loved these little animals that run on batteries, walk and flip over.

THE KIDS ON THE GRANDKIDS ROCK

All of the ones who are old enough including when mine were little kids played on this rock. Now they are playing on the same rock their daddy's did.
