Decorating cookies is more like it. They had fun.

Holly - we loved having you for a couple days

CHOCOLATE ZUCCINI CAKE

This could really be called cake.

Rich and moist.

Best aged one day.

Chocolate Zucchini Bread

3 eggs

2 c sugar

1 1/4 c vegetable oil

4 c grated zucchini

2 t vanilla extract

6 T unsweetened cocoa powder

2.5 c flour

1 t baking soda

1 t salt

2 t cinnamon

1 c chocolate chips

In mixer blend eggs, sugar and oil well.

Add zucchini, mix well.

Sift dry ingredients and mix on low.

Fold in chocolate chips.

Bake at 350 in greased bundt pan.

(I used an angel food cake pan)

for 50-55 minutes.
